Strawberry, Avocado & Walnut Salad

Colorful and nutritious

Ingredients:

  • Mixed greens or baby spinach

  • Fresh strawberries, sliced

  • ½ avocado, cubed

  • Toasted walnuts or almonds

  • Crumbled feta cheese (optional)

  • Dressing: olive oil, balsamic vinegar, salt, and a touch of honey

Instructions:

Combine all salad ingredients in a large bowl.

Add dressing just before serving and toss gently.

White Chocolate Raspberry Cookies

Ingredients (for ~18 cookies):

  • 2 cups (250 g) all-purpose flour

  • ½ teaspoon baking soda

  • ¼ teaspoon salt

  • ½ cup (115 g) unsalted butter, softened

  • ½ cup (100 g) brown sugar

  • ⅓ cup (70 g) white sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

    1 cup white chocolate chips or chunks

  • 1 cup fresh or frozen raspberries (don’t thaw if frozen)

    Instructions:

    Preheat oven to 180 °C (350 °F). Line a baking sheet with parchment paper.

    Mix dry ingredients: In a bowl, whisk together flour, baking soda, and salt. Set aside.

    Cream butter and sugars: In a large bowl, beat the butter, brown sugar, and white sugar until light and fluffy (about 2–3 minutes).

    Add egg and vanilla: Mix in the egg and vanilla extract until well combined.

    Combine wet and dry: Gradually mix in the flour mixture until just incorporated—don’t overmix.

    Fold in white chocolate: Stir in the white chocolate chips or chunks.

    Gently fold in raspberries: Carefully mix in the raspberries to avoid crushing them too much. The dough may get slightly streaky pink—this is normal and pretty!

    Scoop and bake: Scoop tablespoon-sized balls onto the baking sheet, spacing about 2 inches apart. Bake for 10–13 minutes or until edges are golden and centers are set.

    Cool: Let cool on the tray for 5 minutes before transferring to a wire rack.

    Tips:

    Frozen raspberries hold their shape better in the dough.

    You can refrigerate the dough for 30 min before baking for thicker cookies.

    Add a pinch of lemon zest for a bright, tangy twist!

Stuffed Mini Sweet Bell Peppers (Cheesy & Baked)

Ingredients:

  • 10–12 mini sweet bell peppers

  • ½ cup cream cheese (or goat cheese, ricotta, or feta)

  • ¼ cup shredded mozzarella or cheddar

  • 1 garlic clove, minced

  • 1 tbsp chopped fresh herbs (parsley, basil, or chives)

  • Salt & pepper to taste

  • Olive oil (for brushing)

    Optional: chopped cooked bacon or sun-dried tomatoes for extra flavor

Instructions:

Preheat oven to 190°C (375°F).

Prepare peppers:

Slice mini peppers in half lengthwise. Remove seeds and membranes.

Make filling:

In a bowl, mix cream cheese, shredded cheese, garlic, herbs, salt, and pepper. (Optional: add bacon bits or sun-dried tomato pieces.)

Stuff peppers:

Fill each pepper half with the cheese mixture. Arrange on a baking sheet lined with parchment paper.

Bake:

Drizzle or brush lightly with olive oil. Bake for 12–15 minutes, or until cheese is melty and bubbly.

Serve:

Garnish with fresh herbs or a drizzle of balsamic glaze. Serve warm or at room temperature.
